Microwave Heating of Foods: Model Predictive Control Using Reduced Order Models
نویسندگان
چکیده
A reduced order model based on a two-time scale separation of the solution of a PDE is developed for the heating of food products with microwaves. This approach is employed on a Model Predictive Control framework to achieve uniformity of different quality parameters. Due to the fact that predictive control requires measurements which are not always possible to obtain, observers were constructed to estimate temperature evolution everywhere within the product. This methodology will be illustrated with some simple examples.

Exploring the heating patterns of multiphase foods in a continuous flow, simultaneous microwave and ohmic combination heater
In this study, heating patterns of multiphase foods during combined microwave and ohmic heating were explored. A continuous flow microwave and ohmic combination heater was designed and fabricated. In order to achieve the maximum energy efficiency and heating uniformity, impedance matching of the microwave cavity was carried out by a vector network analyzer and electric field analysis was conduc...

The main drawbacks of microwave heating of bioproducts (e.g. foods) are associated with its nonuniform heating patterns. The objective of this work was to derive optimal operating policies for microwave combination ovens in order to achieve better uniformity of temperature and/or quality. The corresponding optimal control problems were stated considering the microwave power and the oven tempera...

The dynamic optimization of microwave heating of foods is considered. Two classes of problems (maximum temperature uniformity and maximum quality uniformity) are stated here. Results obtained using a deterministic method, an stochastic method and new hybrid method are reported. It is shown that, for the models and food loads considered, it is theoretically possible to achieve a quite uniform fi...

In this contribution we present a unifying framework to design safe and efficient operation policies for microwave heat treatments. The approach we follow relies on the dissipative nature of the distributed set of constitutive equations that describe thermal processing dynamics, and their time scale separation property. In this way, we first show how to reconstruct at arbitrary precision the in...

A numeric model was developed to couple electromagnetic (EM) and thermal field calculations in packaged foods moving in pressurized 915 MHz microwave (MW) cavities with circulating water at above 120 C. This model employed a commercial EM package with a customized heat transfer sub-model to solve EM field and thermal field equations. Both methods applied finite-difference timedomain (FDTD) meth...
